Spring is finally here! If you’re like me, spring means trading out your wintery, comfort food recipes for fresh and whole foods that the entire family loves! As soon as the weather starts getting warm, our chaos is more interested in getting outside and playing than sitting around the dinner table. So, my spring dinner meals tend to be short and sweet yet pack a whole lot of nutritious punch. One of our favorite springtime dinners is fresh guacamole. Paired with organic chips and your kids’ favorite fresh fruit, this is one of the most nutritious foods you can feed your family. The avocado is an infamous super food rich in vitamins, minerals, antioxidants, and more! It is also a tremendous source of energy and can hold its own while contending for a complete meal! Here is my homemade recipe for kid-approved chunky guacamole.
Kid-Approved Chunky Guacamole
Gather it:

6 ripe avocados

1 large ripe tomato

1/2 red onion
-
Juice from 2 limes
-
1 cup cilantro
-
1 tbsp garlic powder
-
1/2 tbsp salt
-
1 teaspoon pepper
Make it:
- Peel avocados and cut into chunks (reserve one avocado seed).
- Chop tomato and red onion (I like to remove the seeds of the tomato).
- Finely chop cilantro.
- Squeeze juice from 2 limes.
- Mix all ingredients together, allowing avocado to mash.
- Bonus tip: to keep guacamole from turning brown, put an avocado seed in it ?
