A {Beautifully Chaotic} Pasta Fresca Recipe
Gather it:
- 1 box Penne Pasta
- 1 bag of Fresh Spinach
- 1 Red Onion
- 1-2 Medium Tomatoes
- 1 cup Shredded Parmesan Cheese
- 2 chicken breasts
- Olive Oil
- Balsamic Vinegar
- 2 Tbsp. Garlic Powder
- Salt & Pepper
Cook it:
- Cut onion into thin slices and tomatoes into slices (set aside).
- Remove stems from spinach (set aside).
- In medium sauté pan, heat 2 tbsp of olive oil. Add chicken breasts and season both sides with garlic powder and salt & pepper. Sauté until chicken is thoroughly cooked. Then, cut into strips (set aside).
- Cook noodles according to directions, al dente.
- In large sauté pan, heat 2 tbsp olive oil over medium heat. Add onions and sauté until they are semi translucent.
- Next, mix tomatoes in with onion and continue to sauté over medium heat until tomatoes are soft. The house should be smelling yummy by now!!
- Turn heat to low and transfer cooked penne into the large sauté pan and toss with onions and tomatoes.
- Add in of 4 tbsp olive oil and 1/3 cup of balsamic vinegar.
- Toss penne and veggies over low heat until all is evenly coated with the oil and vinegar.
- Sprinkle in 2 tbsp of garlic powder and salt & pepper to taste. Yes…now a good time to taste ?
- Mix in spinach and sauté low heat until spinach wilts.
- Add in chicken strips and toss over low heat for just another minute.
- Top with shredded Parmesan (optional).
